Are you kidding me? There’s something called a French Toast Casserole? This is the perfect, delicious Christmas morning treat. With a big bowl of fresh fruit, some chicken apple sausage (or real down home pork sausage patties) you can’t go wrong! It can, and should, be made the day before, put in the fridge, and then cooked off just before serving.
- 1 loaf challah or other spongy white bread, diced into 1 inch cubes
- 8 large eggs,scrambled
- 1 cup half and half
- 1 stick butter
- 1 cup light brown sugar
- Optional – chopped walnuts or pecans
- Optional – bananas, blueberries, strawberries, apples, peaches in season
Melt butter in a sauce pan over medium heat. Whisk in brown sugar and half and half. Pour mixture on the bottom of a 9x13in.oblong baking pan. It’s best to use a spray oil on the bottom and sides of the pan before you put the butter in. If you like, top this with bananas and nuts or sliced strawberries, fresh blueberries, apples or peaches. And for a little crunchiness, sprinkle on some granola!
Toss bread cubes evenly to cover the bottom of the pan. Pour in scrambled eggs. Work eggs into the bread with your hands; you want it to soak up the egg. Cover and put in fridge for at least 1 hour or, if you’re thinking ahead, overnight.
Preheat oven to 350. Bake uncovered for 35-45 minutes. The top of the casserole should be light brown. The center will have the consistency of bread pudding. Pre-cut the slices in the pan. To serve, slide a spatula under each slice and serve with the sticky side up. Top with fresh berries and whipped cream! Decadent, yes, but SOOOO good.
